Course: Main Course
Cuisine: French

Ingredients

  • 2 duck breasts
  • 1 tsp salt
For the sauce
  • 1 cup cherries, pitted
  • 1/2 cup red wine
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp butter

Method

  1. Score the duck skin, season with salt, and place skin side down in a cold pan. Cook over medium until the fat renders and the skin is crisp, about 8 minutes.
  2. Flip and cook to medium-rare, then rest.
  3. Pour off most of the fat and add the cherries, wine, honey, and balsamic. Simmer until syrupy.
  4. Swirl in the butter.
  5. Slice the duck and serve with the cherry sauce.

Notes

Starting in a cold pan renders the fat for the crispiest skin. Rest the duck before slicing.
