Pecan Pie Bars

Okay, can we talk about how pecan pie is basically the most nostalgic dessert ever? Every time I smell that toasty, caramel-pecan situation coming out of the oven I am immediately transported back to my grandma’s kitchen table. The problem with a whole pecan pie is… you kind of need a reason to make one. Enter: pecan pie bars. Same dreamy filling, buttery shortbread crust, and zero pressure because they’re meant to be shared at a gathering, popped in a lunchbox, or honestly just eaten over the sink on a Tuesday.
These bars have become one of my go-to desserts when I’m hosting because they travel well, slice cleanly (if you let them cool all the way), and every single person asks for the recipe. I love that about a humble bar dessert. No cake stands, no piping, just good food that makes people happy. Let’s get into it!
Why You’ll Love These Pecan Pie Bars
First, the crust is a simple shortbread press-in situation. No rolling, no chilling, no drama. You literally just mix it and press it into the pan. The filling is that classic corn syrup and brown sugar base loaded with pecan halves, and it bakes up perfectly set with those gorgeous toasty pecans on top. They’re rich, sweet, a little salty, and completely irresistible.

Tips for the Best Results
The biggest thing is letting them cool COMPLETELY before you cut them. I know it’s hard. I know you want to dig in right now. But if you cut them warm the filling will be gooey and messy (still delicious, just not neat squares). Give them at least 2 hours at room temp or pop them in the fridge to speed it up.
Also, line your pan with parchment paper and leave some overhang on the sides. This makes lifting the whole slab out of the pan so easy and your bars will have clean edges. These also freeze really well, so feel free to make a batch ahead and thaw the night before you need them.

Notes

Serving and Storing
These bars are wonderful at room temperature but I personally love them slightly warm with a scoop of vanilla ice cream. For storage, keep them in an airtight container at room temp for up to 3 days or in the fridge for up to a week. They also freeze beautifully, just wrap individually and freeze for up to 2 months.
Tools for This Recipe
- USA Pan Nonstick 9×13 Cake Pan: The exact 9×13 size this recipe calls for, with a sturdy pan that bakes the shortbread crust evenly.
- Katbite Precut 9×13 Parchment Paper Sheets: Cut to fit a 9×13 pan, so lining it takes seconds and lifting the cooled bars out for clean slicing is easy.
- Spring Chef Pastry Blender: Cuts the cold butter into the flour for that crumbly crust so much faster than a fork.
Perfect for Thanksgiving, Christmas cookie trays, potlucks, or just because it’s fall and you deserve something cozy. Once you make these you will absolutely be making them on repeat. Happy baking, friend!
