penne alla vodka pasta with tomato cream sauce

Penne alla Vodka

Penne alla vodka is one of those pasta dishes that sounds fancy but is secretly one of the easiest things you’ll ever make. That blush pink sauce — silky, a little spicy, rich with cream and Parmesan — is genuinely hard to stop eating. I made this for a girls dinner a while back and everyone kept asking for the recipe and I had to admit it took less than 30 minutes.

The vodka might seem like a weird ingredient but it actually does something real here — it helps pull out flavors from the tomatoes that water and cream alone can’t reach, and it helps bind the cream and tomatoes together into that gorgeous unified sauce. It cooks off so you won’t taste alcohol at all. (some links here are affiliate links, which just means I earn a small commission at no extra cost to you)

The Sauce That Changed Everything

I was skeptical about vodka pasta for the longest time and then I tried it and immediately understood why it has such a cult following. There’s something about this sauce that is genuinely addictive — it’s the combination of sweet tomatoes, rich cream, a little heat from the red pepper flakes, and that umami depth from Parmesan. It coats every single piece of pasta perfectly.

A wide large saute pan is really the right tool for this because you need room to toss the pasta and sauce together without things flying everywhere. I use mine for everything but this sauce is where it really shines.

Tips for the Best Vodka Sauce

Use good quality canned San Marzano tomatoes if you can find them — they’re sweeter and less acidic than regular canned tomatoes and it really does make a difference in the final sauce. Also don’t rush the simmer step. Letting the sauce cook down for a full 10 minutes before you add the cream helps concentrate all those flavors.

And please save your pasta water! The starchy water helps loosen the sauce if it gets too thick and helps it cling to the pasta better. It’s one of those small steps that makes a real difference.

Servings: 4 servings
Course: dinner
Cuisine: Italian

Ingredients

  • 1 lb penne pasta
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1/4 tsp red pepper flakes
  • 1/3 cup vodka
  • 1 28oz can crushed San Marzano tomatoes
  • 3/4 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • salt and pepper to taste
  • fresh basil for garnish

Method

  1. Cook penne in a large pot of salted boiling water until al dente. Reserve 1 cup pasta water before draining.
  2. Melt butter in a large saute pan over medium heat. Add garlic and red pepper flakes and cook 1 minute.
  3. Add vodka and let it cook off for 2 minutes, stirring.
  4. Add crushed tomatoes, season with salt and pepper. Simmer 10 minutes.
  5. Stir in heavy cream and Parmesan. Add drained pasta and toss, adding pasta water as needed to loosen the sauce. Garnish with fresh basil.

Notes

The vodka cooks off but adds depth and helps emulsify the cream and tomatoes. Do not skip it — it makes a real difference.

Serving and Storing

This is amazing with a big hunk of crusty garlic bread and a simple green salad. Leftovers reheat beautifully — just add a splash of cream or pasta water when warming it up and it comes right back to life. It also freezes surprisingly well if you want to make a big batch.

This is my go-to dinner party pasta because it feels elevated but I can make it in under 40 minutes and it always gets rave reviews. I hope it becomes a staple in your house too!

xo, Pam
