Pesto Gnocchi with Roasted Cherry Tomatoes
Ingredients
Method
- Heat the oven to 425 degrees. Toss the cherry tomatoes on a sheet pan with 1 tablespoon of the olive oil, the salt and the pepper. Roast for 15 minutes, until they blister and start to burst.
- While the tomatoes roast, toast the pine nuts in a dry skillet over medium heat for 2 to 3 minutes, shaking the pan often. Tip them onto a plate right away so they do not scorch.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2 to 3 minutes. Scoop out 1/4 cup of the cooking water, then drain.
- Return the gnocchi to the warm pot off the heat. Add the pesto and the remaining tablespoon of olive oil and toss, loosening with a splash of the reserved water until everything looks glossy.
- Fold in the roasted tomatoes along with any juices from the pan, then stir through the parmesan. Taste and add salt if it needs it.
- Top with the toasted pine nuts, torn basil and a little more parmesan. Serve right away while the gnocchi is still pillowy.
