refreshing pineapple cocktail with spicy rim

Pineapple Jalapeno Margarita

If you have never had a pineapple jalapeno margarita before, I need you to stop what you are doing and make one right now. This cocktail is everything: sweet tropical pineapple, bright lime, good tequila, and just enough jalapeno heat to make it exciting without setting your mouth on fire. It is the drink that sounds a little unexpected and then you take one sip and immediately understand why everyone is obsessed with spicy cocktails right now.

I am a full convert to spicy margaritas. There is something about that sweet-heat combo that is just so addictive. This one is perfect for Taco Tuesday, girls night, or really any occasion where you want to serve something that gets people talking. The Tajin rim adds even more layers of flavor and the pineapple garnish makes it look like you just got back from a tropical vacation.

Controlling the Heat

This is totally customizable based on your heat tolerance. The jalapeno seeds hold most of the heat so remove them for a milder cocktail and leave them in if you like it spicy. Muddle the slices briefly for less heat or really work them for maximum spice. I always taste the shaken drink before straining and add another slice and shake again if I want more heat. You are in total control here.

A good cocktail shaker is all you need for this one. The shaking is what integrates that jalapeno heat beautifully throughout the whole drink.

The Tajin Rim

Do not skip the Tajin rim. That blend of chili, lime, and salt on the rim of the glass adds another flavor dimension to every single sip. It is so much more interesting than a plain salt rim and it looks absolutely gorgeous. Just run a lime wedge around the rim and dip it into a shallow plate of Tajin. Done. Perfect every time.

Pineapple Jalapeno Margarita

Sweet fresh pineapple meets spicy jalapeno in this bold, tropical margarita that is equal parts refreshing and exciting. Your new favorite cocktail.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 2 cocktails
Course: Drinks
Cuisine: Mexican

Ingredients

  • 4 oz silver tequila
  • 3 oz fresh pineapple juice
  • 1.5 oz fresh lime juice
  • 1 oz triple sec
  • 1 oz agave nectar
  • 3-4 slices fresh jalapeno seeds removed for less heat
  • tajin or salt for rim
  • pineapple wedge and jalapeno slice for garnish
  • ice

Method

  1. Rim glasses with a lime wedge and dip in Tajin or salt. Fill with ice.
  2. In a cocktail shaker, muddle jalapeno slices with agave until fragrant.
  3. Add tequila, pineapple juice, lime juice, triple sec, and ice.
  4. Shake vigorously for 15 seconds. Taste and add more jalapeno if you want more heat.
  5. Strain into prepared glasses. Garnish with pineapple wedge and a jalapeno slice.

Notes

Control the heat level by adding more or fewer jalapeno slices and by muddling longer or shorter. Removing seeds reduces heat significantly.

Make It a Pitcher

This recipe doubles and triples perfectly for a crowd. Muddle extra jalapeno in the bottom of a pitcher, add all the liquid ingredients, stir well, and refrigerate up to 4 hours. Add ice to individual glasses and pour from the pitcher to serve. Strain out the jalapeno pieces before refrigerating so it does not get too spicy as it sits.

This is hands down one of my favorite cocktails to serve when I want to impress people with minimal effort. Make it once and it will become your signature drink all summer long. Cheers!

XO, Pam
