Homemade Glazed Sourdough Donuts

If you're a fan of sourdough and crave a sweet treat, these homemade glazed sourdough donuts are a must-try. Light, fluffy, and just the right amount of tang, they are perfect for a special breakfast or an afternoon snack. The best part? You can make them right in your kitchen with your sourdough starter!


Ingredients

For the Dough:

  • 1 cup sourdough starter (active and bubbly)

  • 3 1/2 cups all-purpose flour

  • 1/2 cup milk (room temperature)

  • 1/4 cup sugar

  • 2 large eggs (room temperature)

  • 1/4 cup unsalted butter (melted)

  • 1 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground nutmeg (optional)

For the Glaze:

  • 2 cups powdered sugar

  • 1/4 cup milk

  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine your active sourdough starter, milk, sugar, eggs, melted butter, salt, vanilla extract, and nutmeg (if using).

  2. Gradually add the flour, mixing until the dough comes together. It should be soft and slightly sticky.

  3. Knead the dough for about 10 minutes until smooth and elastic. If you have a stand mixer, use the dough hook on medium speed for 5-7 minutes.

  4. Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm place for 3-4 hours or until doubled in size.

Step 2: Shape the Donuts

  1. Once the dough has risen, turn it out onto a floured surface and gently deflate it.

  2. Roll the dough out to about 1/2-inch thickness. Using a donut cutter or two round cutters (one larger and one smaller), cut out the donuts.

  3. Place the cut donuts on a parchment-lined baking sheet. Cover them with a towel and let them rise for another 1-2 hours, until puffed up.

Step 3: Fry the Donuts

  1. In a large, heavy-bottomed pot, heat oil to 350°F (175°C). Be sure to use a thermometer to keep the oil at a consistent temperature.

  2. Carefully lower a few donuts into the hot oil, frying them in batches. Fry each side for about 1-2 minutes or until golden brown.

  3. Remove the donuts from the oil and place them on a wire rack to cool slightly.

Step 4: Glaze the Donuts

  1. While the donuts cool, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.

  2. Dip the warm donuts into the glaze, ensuring they're fully coated. Place them back on the wire rack to let the glaze set.

Step 5: Enjoy! These glazed sourdough donuts are best enjoyed fresh, but they also keep well for a day or two. Serve them with a hot cup of coffee or a glass of milk for a delightful treat.
