Sheet Pan Chicken Fajitas for Busy Weeknights
By Wednesday my will to cook is hanging on by a thread. The kids are hungry, I am tired, and the thought of dirtying five pans makes me want to lie down on the kitchen floor. Sheet pan fajitas are the dinner that saves me from myself.
Everything roasts together on one pan, the oven does the work, and you end up with sizzling chicken and peppers that taste like you fussed when you absolutely did not. One pan in, one pan to wash. That is the kind of math that gets me through the week.
Heads up, some links below are affiliate links, so I earn a tiny commission at no cost to you if you grab something.

Why sheet pan dinners win on weeknights
The whole point is hands off cooking. You slice, you toss, you walk away, and twenty five minutes later dinner is done while you helped with homework or just stared into the fridge for a minute of peace. Cleanup is one pan, which on a weeknight feels like a genuine love language.
What you need
Chicken breasts or thighs sliced thin, bell peppers in every color you can find, a sliced onion, olive oil, and fajita seasoning. I keep a jar of homemade seasoning going, but a good store packet is completely fine and I will not tell anyone.
The real MVP is a sturdy rimmed sheet pan. A flimsy one warps in the heat and steams your food instead of roasting it. I line mine with parchment paper so cleanup is basically nothing.

How to make them
Heat the oven to 425. Toss the chicken, peppers, and onion with olive oil and seasoning right on the pan, spread everything in a single layer so it roasts instead of steams, and bake for twenty to twenty five minutes. If you want a little char, run it under the broiler for the last two minutes. Watch it closely, the broiler turns on you fast.
Build your plate
Pile it into warm tortillas with all the usual suspects. Lime, sour cream, avocado, a shower of cilantro. We do a little toppings bar so everyone builds their own, which somehow makes the kids eat more vegetables without realizing it. Leftovers make an excellent rice bowl the next day.
The takeaway
Weeknight dinner does not have to break you. One pan, a hot oven, and twenty five minutes is genuinely enough. If you have a sheet pan dinner that keeps your week together, share it in the comments, I am always building out the rotation.
So glad you are here.
Pam
