Spaghetti Carbonara
Okay so I have to tell you about the dinner that completely changed how I feel about pasta night. I’ve always kind of avoided carbonara because it seemed intimidating, like one wrong move and you’ve got scrambled egg pasta, which is very much not the vibe. But once I actually tried it I realized it’s one of those recipes that looks fancy but is secretly pretty easy once you know the little tricks.
This spaghetti carbonara is the real deal — no cream, just eggs, Pecorino Romano, guanciale (or pancetta if that’s what you’ve got), and a whole lot of black pepper. It comes together in about 30 minutes and honestly tastes like something you’d order at a little trattoria in Rome. My family was completely obsessed and it’s been on our dinner rotation ever since. What Makes Carbonara Special
The magic of carbonara is all in the technique. You’re creating a creamy sauce using just eggs and cheese — the heat from the pasta and a splash of starchy pasta water does all the work. The key is to pull your pan off the heat before adding the egg mixture so things don’t curdle. Once you nail that step, you’re golden every single time.
I love using a good set of pasta tongs for tossing everything together because it gives you so much control. And a proper Parmesan grater makes all the difference when it comes to getting that cheese finely grated so it melts right into the sauce.

Tips for Perfect Carbonara Every Time
A few things I’ve learned from making this on repeat: always save more pasta water than you think you’ll need because you can always add more but you can’t take it away. Use room temperature eggs — straight from the fridge eggs can sometimes cause the sauce to seize up. And please, please use freshly cracked black pepper. Pre-ground just doesn’t hit the same and pepper is basically a co-star in this dish.
Also guanciale is the traditional choice and it really does taste better than pancetta or bacon. It’s fattier and has this slightly sweet, porky richness that elevates the whole dish. You can usually find it at Italian delis or specialty grocery stores.

Spaghetti Carbonara
Ingredients
Method
- Bring a large pot of salted water to a boil. Cook spaghetti until al dente, reserving 1 cup pasta water before draining.
- While pasta cooks, saute guanciale in a large skillet over medium heat until crispy. Remove from heat.
- Whisk together eggs, egg yolks, and Pecorino Romano in a bowl. Season with black pepper.
- Add hot drained pasta to the skillet with guanciale. Toss off heat. Pour egg mixture over pasta, adding pasta water a splash at a time while tossing constantly to create a creamy sauce.
- Serve immediately with extra cheese and cracked pepper.
Notes

Make It Your Own
While the classic version is pretty perfect as is, you can absolutely tweak things to your taste. Add a handful of frozen peas for some color and sweetness. Throw in some crispy mushrooms if you want to go meatless. Some people add a little lemon zest at the end for brightness and honestly that’s a great call. Just don’t add cream — that’s not carbonara, that’s something else entirely (still delicious, but different).
If you try this recipe I really hope you love it as much as we do. It’s one of those weeknight dinners that feels really special without requiring a ton of effort and that is absolutely my favorite kind of meal. Drop a comment below and tell me how it turned out!
xo, Pam
