Course: Main Course
Cuisine: middle eastern

Ingredients

For the kofta
  • 1.5 lbs ground lamb
  • 1 onion, grated
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/4 cup parsley
For the sauce
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp mint, chopped

Method

  1. Mix the lamb with the grated onion, garlic, spices, and parsley.
  2. Shape the mixture into oblong koftas around skewers.
  3. Grill over medium-high, turning, until browned and cooked through, about 10 minutes.
  4. Stir the yogurt with lemon juice and mint.
  5. Serve the koftas with the yogurt sauce, pita, and salad.

Notes

Grate the onion so it disappears into the meat and keeps it moist. Do not overmix or the koftas toughen.
