Spinach and Artichoke Dip
Okay, can we talk about the dip that single handedly makes me the most popular person at every gathering? Because this spinach and artichoke dip is it. I have shown up to game days, baby showers, and random Tuesday night hangouts with this thing warm in my hands, and I have never once brought home leftovers. Not once.
I am a Kansas City mom juggling a toddler, a growing belly, and a calendar that somehow always has one more thing on it, so I need recipes that look impressive but take basically zero effort. This one stirs together in about ten minutes and the oven does the rest. That is my kind of math.

Why this dip works every single time
The secret is balance. You want creamy from the cream cheese and sour cream, a little tang from the parmesan, and enough garlic to make the whole kitchen smell like a cozy Italian restaurant. The artichokes give it that little bite, and the spinach makes me feel like I am being at least a tiny bit responsible. We take our wins where we can, friends.
My one non negotiable tip is to squeeze the spinach until you think you are done, then squeeze it again. Watery dip is sad dip, and we are not about that life.
A few things that make it easier
I keep a good baking dish and a sturdy hand mixer on hand for nights when I am stirring with one arm and bouncing a toddler with the other. Here are the few things I actually reach for.
- A pretty ceramic baking dish that goes straight from oven to table
- A reliable hand mixer for smooth cream cheese
- A big serving platter for all the dippers
Heads up, a few of these are affiliate links, which just means I earn a tiny commission at no cost to you.
Make it your own
Some nights I throw in a handful of chopped jalapenos for a little heat, or swap in a smoky white cheddar when I am feeling fancy. Serve it with toasted baguette, buttery crackers, or just a giant pile of tortilla chips. There is no wrong answer here.
