Tropical Pineapple Mint Spritzer
Every summer I go through a phase where I want every single drink I make to taste like a vacation. This Tropical Pineapple Mint Spritzer is my absolute favorite result of that phase. It is bright, bubbly, and refreshing in the best way, with fresh pineapple juice, a squeeze of lime, muddled mint, and sparkling water. It is technically a mocktail but it is so good that nobody ever misses the alcohol. Make a big pitcher for your next backyard gathering and watch it disappear in about 10 minutes flat.
This comes together in about five minutes and you can absolutely make it by the pitcher for a crowd. I love it for baby showers, outdoor parties, girls’ lunches, or just a Thursday afternoon on the porch when I need something that feels special. (This post contains affiliate links. Notes
Why This Spritzer Is Summer in a Glass
The combination of pineapple and fresh mint sounds simple, but it is genuinely magical. The pineapple brings that bright, tropical sweetness, the lime adds just enough tartness to balance it, and the mint makes the whole drink feel cool and refreshing even on the hottest day. Sparkling water gives it that satisfying fizz without any extra sugar or artificial flavoring. It is clean, it is fresh, and it is the kind of drink that makes people ask what you put in it.

Tips for the Best Spritzer
Use fresh pineapple juice if you can get it. You can blend fresh pineapple chunks and strain out the pulp, or look for a good quality 100 percent pineapple juice with no added sugar. The flavor difference is noticeable. When muddling your mint, press gently. You want to release the aromatic oils, not bruise the leaves into bitterness.
For parties, I love using a pretty glass pitcher to make a big batch of everything except the sparkling water, then add it to each glass right before serving so it stays bubbly. Pineapple juice frozen in an ice cube tray makes brilliant ice cubes that keep the drink cold without diluting it as they melt. A nice set of tall highball glasses makes the whole presentation feel so polished.

Make It Your Own
Add a splash of coconut water alongside the sparkling water for an extra tropical layer. A few slices of fresh jalapeรฑo muddled with the mint gives a spicy pineapple version that is incredibly addictive. For an adult version, add 1.5 oz of white rum or coconut rum per glass and you have a full tropical cocktail. Mango juice or passion fruit juice can swap in for half the pineapple juice for different flavor variations. The garnish is where you can really make it shine: a pineapple slice on the rim, a curl of lime peel, and a big sprig of mint sticking out the top looks absolutely stunning.
The Final Sip
This Tropical Pineapple Mint Spritzer is proof that you do not need alcohol to have a beautiful, impressive drink. It is the kind of thing that makes every gathering feel a little more festive, a little more fun, and a lot more delicious. Pour yourself a big glass, kick your feet up, and let it taste like a vacation no matter where you are. xo, Pam
