Course: Main Course
Cuisine: Indian

Ingredients

  • 1.5 cups red lentils rinsed
  • 1 can (14oz) coconut milk
  • 1 can (14oz) diced tomatoes
  • 2 cups vegetable broth
  • 5 oz baby spinach
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 2 tbsp neutral oil
  • 1 tsp salt

Method

  1. Warm the oil in a large pot over medium heat. Cook the onion 5 minutes until soft, then add the garlic and ginger for 1 minute.
  2. Stir in the cumin and garam masala and toast for 30 seconds, until the kitchen smells like it.
  3. Add the lentils, diced tomatoes, coconut milk, broth and salt and bring to a simmer.
  4. Cook uncovered 20 to 25 minutes, stirring now and then, until the lentils have broken down and the curry is thick.
  5. Stir in the spinach a handful at a time until it wilts.
  6. Taste for salt and serve over rice or with warm naan.

Notes

Red lentils need no soaking and break down on their own, that is what thickens the pot. Finish with lime if you want it brighter.
