Virgin Pina Colada
Okay so I am going to be honest with you. I am currently pregnant and have been deeply, desperately missing a cold pina colada on a hot summer day. Like more than almost anything else on the no-fly list right now. So I did what any reasonable person would do and I made a virgin version that is so good I genuinely do not feel like I am missing out. This Virgin Pina Colada has become my absolute go-to this summer and I have made it probably three times a week.
Frozen pineapple, full-fat coconut milk, a splash of pineapple juice, and a little vanilla. Blend it all up and you get this thick, creamy, tropical drink that tastes like a real pina colada. Honestly even non-pregnant people in my house are requesting this over the real thing. It is that good.
Why This Virgin Pina Colada Actually Tastes Amazing
Full-fat canned coconut milk is non-negotiable. The lite versions are too watery and you lose that rich, creamy texture that makes a pina colada feel indulgent. Go full fat, no regrets.
Frozen pineapple instead of ice is the key to getting a thick, slushie-like consistency without diluting the flavor. Fresh pineapple plus extra ice works in a pinch but frozen pineapple straight from the bag is the move. I always keep a big bag in my freezer for exactly this purpose.
A tiny splash of vanilla extract rounds out the flavor in a way that is hard to put into words. It just makes the whole drink taste more complete somehow. Trust the vanilla.
Taste before you add honey. Pineapple varies in sweetness and you might not need any added sugar at all. The coconut milk adds richness and the pineapple juice adds sweetness on its own.
Fun Ways to Serve It
Rim the glass with toasted coconut flakes for a fun presentation. Stick a wedge of fresh pineapple on the side. Pour it into a hollowed-out coconut if you are feeling extra. These are also incredible as popsicles if you pour the blended mixture into popsicle molds and freeze overnight.
