Watermelon Feta Salad That Disappears at Every Cookout

It is the middle of June in Kansas City, which means the backyard is basically a sauna and nobody, including me, wants to turn on the oven. Every weekend there is a cookout, a pool day, or a porch hang with too many people and not enough chairs, and somebody always texts the morning of asking what they should bring. This is the thing I bring. Every single time.

Watermelon feta salad sounds a little fancy and a little weird if you have never had it, I get it. Sweet fruit and salty cheese felt wrong to me too, right up until the first bite, and then I was the person standing over the bowl with a fork pretending I was just tidying it up. It is ten minutes of work, it costs almost nothing, and it disappears faster than anything else on the table.

Heads up, a few of the links below are affiliate links, which just means if you grab something I get a tiny commission at no extra cost to you. Only stuff I actually use made the cut.

Why you will love it

It is no-cook, which in June is the whole point. There is no boiling, no baking, no standing over a hot stove while your makeup slides off. You cube, you toss, you walk outside.

It also hits every note at once. The watermelon is cold and sweet, the feta is salty and creamy, the mint makes the whole thing taste like summer, and a little honey lime dressing ties it together so it is not just fruit and cheese sitting next to each other. It looks gorgeous on a platter too, which never hurts when you are walking into someone else her party.

Ingredients you will need

Nothing on this list is hard to find, and most of it is probably cheaper than you think this time of year. Here is the full rundown:

For the salad: 6 cups seedless watermelon cut into bite sized cubes, 6 ounces feta cheese cubed or crumbled, a third of a cup fresh mint torn or sliced thin, a quarter cup thinly sliced red onion if you like a little bite, and one small cucumber sliced into half moons if you want extra crunch. The cucumber and onion are both optional, so leave them out if you are keeping it simple.

For the honey lime dressing: 2 tablespoons good olive oil, the juice of one lime which is about 2 tablespoons, 1 teaspoon honey, a pinch of flaky sea salt, and a few cracks of black pepper. A jar of flaky sea salt is one of those little things that makes everything taste more expensive, and I keep it next to the stove for exactly this reason.

One real tip from someone who has made this a hundred times: buy a block of feta packed in brine instead of the pre crumbled kind. It is creamier and it actually tastes like something. A decent chef knife makes the watermelon cubing go quick, and if you are serving a crowd, a big shallow serving bowl shows it off better than a deep one.

How to make it

This barely qualifies as a recipe, which is exactly why I love it. Whisk the olive oil, lime juice, honey, salt, and pepper together in a little bowl until it looks like a dressing. Taste it. It should be a little tart and a little sweet, so adjust the honey or lime until it makes you do a small happy nod.

Pile the watermelon into your serving bowl, add the cucumber and onion if you are using them, then scatter the feta and most of the mint over the top. Drizzle the dressing on and toss it very gently, you want to coat everything without smashing the watermelon into mush. Finish with the rest of the mint and one more tiny pinch of flaky salt, and you are done. The full measurements and the printable version are in the recipe card below.

Tips, swaps, and make ahead

Salt is your friend here. A light sprinkle on the watermelon and feta pulls out a little juice and makes everything taste brighter, so do not skip it. If you want to dress it up, a handful of fresh basil along with the mint is lovely, and a few toasted pine nuts or a drizzle of balsamic glaze right before serving feels a little extra in the best way.

On making it ahead: you can cube the watermelon and crumble the feta a few hours early and stash them separately in the fridge, but hold the dressing and the mint until right before you serve. Watermelon gives off a lot of water once it sits, so a dressed salad that waits around turns into soup. If you somehow have leftovers, and that rarely happens, keep them in an airtight container in the fridge and eat them within a day.

Quick recipe details

Prep time is about 15 minutes with no cooking at all. It makes roughly 6 servings as a side, easily doubled for a bigger crowd. Best served cold and fresh, and any leftovers keep in the fridge for up to one day. Full ingredients, amounts, and steps are in the printable card right here:

Watermelon Feta Salad with Mint

A no-cook summer side that comes together in ten minutes. Juicy watermelon, salty feta, fresh mint, and a quick honey lime dressing. The cookout salad that always disappears first.
Prep Time 15 minutes
Total Time 15 minutes
Servings: 6 servings
Course: Salad
Cuisine: Greek

Ingredients

For the salad
  • 6 cups seedless watermelon, cut into bite sized cubes about half a small watermelon
  • 6 oz feta cheese, cubed or crumbled block feta in brine tastes best
  • 1/3 cup fresh mint leaves, torn or thinly sliced
  • 1/4 cup thinly sliced red onion optional
  • 1 small cucumber, sliced into half moons optional
For the honey lime dressing
  • 2 tbsp extra virgin olive oil
  • 1 lime, juiced about 2 tablespoons
  • 1 tsp honey
  • 1 pinch flaky sea salt plus more to taste
  • freshly cracked black pepper, to taste

Method

  1. Whisk the olive oil, lime juice, honey, a pinch of salt, and a few cracks of pepper in a small bowl until it comes together. Taste and adjust, it should be a little tart and a little sweet.
  2. Add the watermelon cubes to a large serving bowl or platter. If you are using cucumber and red onion, add those too.
  3. Scatter the feta over the top, then add most of the mint. Save a little mint for finishing.
  4. Drizzle the dressing over everything and toss very gently so the watermelon does not break down. Top with the reserved mint and a little extra flaky salt.
  5. Serve right away while cold, or chill for up to thirty minutes. This one is best fresh.

Notes

Salt the watermelon and feta lightly, the salt pulls out a little juice and makes everything taste brighter. If you are making this ahead, hold the dressing and mint until right before serving so nothing goes soggy.

The takeaway

Some of the best summer food is the stuff that takes ten minutes and tastes like you tried way harder than you did. This watermelon feta salad is peak example. Make it once, watch it vanish at the cookout, and get ready for people to ask you for the recipe like it is some big secret.

If you make it, come back and tell me how it went, drop it in the comments, my cart always has room for one more pretty serving bowl. So glad you are here.

xo, Pam
