Weeknight Ground Beef Tacos with Quick Slaw
Taco night is sacred in my house, and not in a fussy way. It is the dinner I throw together when the day got away from me, when nobody can agree on what they want, and when I need everyone fed and happy in under thirty minutes. These weeknight ground beef tacos with a quick five minute slaw are my reliable answer to all of the above, and they have never once let me down.
The secret here is that I ditched the seasoning packet years ago. Not in a snobby way, I just realized the homemade blend takes one extra minute, tastes worlds better, and skips that weird packet aftertaste. And the quick slaw on top? That little bit of crunch and lime is what takes these from fine to actually crave worthy. My family asks for these on repeat.

Make your own taco seasoning, seriously
I promise this is the easiest upgrade you will ever make. Chili powder, cumin, smoked paprika, garlic powder, and salt, all things you probably already have. Mix it right into the browned beef with a splash of water and it simmers into this saucy, perfectly seasoned filling in a couple minutes. Once you do it this way you genuinely will not miss the packet, and you control exactly how much salt goes in.
I brown my beef in a well loved cast iron skillet because it gets those nice crispy edges, but any skillet works. If you want to keep a good all purpose taco seasoning on hand for the truly chaotic nights, no judgment here, I keep a backup too.
Do not skip the quick slaw
I know it is tempting to just throw on cheese and call it done, and some nights I do. But this five minute slaw is the move. It is just shredded cabbage tossed with lime, a little oil, and salt, and it adds the exact crunch and brightness that ground beef tacos are usually missing. It cuts the richness and makes the whole thing feel fresh instead of heavy. Make it first so it has a few minutes to soften while the beef cooks.
For serving, I love setting everything out and letting people build their own. If you want to make it feel like a whole thing, a set of standing taco holders keeps everything upright and makes my kid weirdly excited about dinner, which is always a win.

Ingredients
Method
- In a small bowl, toss the shredded cabbage with the lime juice, olive oil, and salt. Set aside so it can soften slightly while you cook the beef.
- Brown the ground beef in a skillet over medium high heat, breaking it up, until no longer pink. Drain off excess grease.
- Add the chili powder, cumin, smoked paprika, garlic powder, and salt to the beef and stir to coat.
- Pour in the water and simmer for 3 to 4 minutes until the beef is saucy and the liquid has mostly cooked off.
- Pile the beef into warm tortillas, top with the quick slaw, and add cheese, cilantro, or hot sauce as you like.
Notes
The dinner that saves weeknights
This is the recipe I come back to over and over because it is fast, everyone eats it, and it never feels like a chore. Double the beef and you have lunch the next day, or turn the leftovers into a taco salad or quesadilla. It is endlessly flexible and endlessly forgiving, which is exactly what I need from a weeknight dinner right now.
So glad you are here.
